“What was available?

Bill Chawke was among several individuals who ventured into the pizza industry during the lockdown of 2020. By mid-May the same year, Bill and his group utilized two transport containers stationed outside The Goat Bar in Goatstown, initiated their brand-new Stefano Ferrara custom-made ovens, and started dispensing wood-fired pizzas.

The next month, he inaugurated their second venue at The Old Orchard Inn in Rathfarnham and later, in October 2023, they launched their initial physical outlet in Donnybrook.

The pizza dough, made with Italian 0.0 flour, undergoes a fermentation process for two to three days. The toppings, which are altered regularly, showcase Irish goods, including mozzarella from Toons Bridge and vegetables procured from Cullen’s Farm in Wexford. Available in two dimensions, 9.5″ and 12.5″, they’ve recently introduced gluten-free bases at their Donnybrook place. The menu also features Buffalo and BBQ chicken wings.

What feedback can be given about the service?
I ordered in person from the separate unit of Goatstown Fired Up, situated next to the internal bar. One can enjoy sports on a massive screen while waiting for their meal. Once the buzzer signals, pizzas are ready for collection and can either be enjoyed in the bar setting or carried out.

How was the quality of the meal?
The pizzas were satisfactory, with ample leopard spots on the base. Personally, I would have preferred a bit more goat’s cheese on the G.O.A.T., since the cheese featured, Five Mile Town, seems rather mild. Caramelized onions and sun-dried tomatoes contribute a hint of sweetness. The Spicy Nduja came with its namesake meat sprinkled over the San Marzano tomato sauce combined with Toons Bridge mozzarella. Italian Stallion was our top pick, with a strong taste arising from the Italian sausage.

What was the condition of the packaging?”
