Chicken taquitos from Mexico

Utilise these ingredients for your dish: ground cumin (1 teaspoon), smoked paprika (1 teaspoon), salt & black pepper, cream cheese (2 tablespoons), cooked & shredded chicken (250g), grated cheese (100g), chopped coriander (2 tablespoons), and corn tortillas (16 in number). To garnish your dish you should have sour cream, guacamole, jalapenos, Mexican rice, and tomato salsa.

First, create a mixture of your spices and cream cheese. Next incorporate the shredded chicken and grated cheese into the mixture whilst seasoning adequately with salt and black pepper. Finally, blend in the chopped coriander.

To prepare the tortillas, you should place about half a dozen at once on a single layer in an air fryer and heat them up for five minutes. This is done in order to soften the tortillas and make them easier to handle. This step can also be done by manually warming each tortilla on a pan for a short period of time. Once this is done, add a couple tablespoons of the filling onto each tortilla ensuring they aren’t overfilled to facilitate rolling. After rolling them up, place the taquitos in a single layer in the air-fryer basket. Lightly spray them with cooking oil and allow to fry for 20 minutes until they become crispy and fully cooked, ensuring to flip them halfway through.

To serve these taquitos, sprinkle more cheese on top of them and pair with some freshly chopped coriander. They pair excellently with Mexican rice, guacamole, and pickled pink onions. Enjoy your meal!
